Lifeline

Somewhere in Virginia, there is a girl we'll call Ellie, because that is her name.  When Ellie is not saving animals as a vet by day, she is superheroing around, saving vegans from hunger.   After hearing my tales of pork and woe, Ellie could see that drastic action was needed, and so she put on some spandex and a cape (probably) and emergency airlifted some vital supplies to the wilds of South, saving us all.  "What the heck is that stuff?" You non-vegans ask.  It's injera, sillies.  Does that clear it up for you? Oh.  Well injera is the spongey flat-bread upon which the great majority of Ethiopian food is built.  And it is our favorite.  And it is definitely not available for pick-up in South.  Look how yummy it is!  Little One couldn't even wait to unwrap it, it was so delicious.
So I threw together some makeshift wat
(the stuff on top, deprived ones) and we gobbled it up immediately.  Mmmm.  Down here in South, there are some very happy displaced Yankees, very grateful to have been rescued from vegi-famine.
And we just know that out there somewhere, there is a veterinarian who may or may not be wearing spandex and a cape, who is definitely (we think) staring off into the south as the sun sets with her hands on her hips saying, "my work here is done".

Thank you Ellie!!!!!
